【生絞り洋梨サワー】 洋梨の果肉と果汁、ふた通りで仕上げたサワーです🍐 茶の湯/bar 楚々（@chanoyubar_soso）山口さん監修の一杯です。 まず、米焼酎に熟した洋梨の果肉を漬け込みました。 その洋梨焼酎に、洋梨の果汁を合わせています。 コールドプレスで絞った果汁は、 沸騰させないように鍋をゆすりながら、弱火でじっくり🔥 量が8割になるまで煮詰めて、洋梨の甘さと香りをぎゅっと濃くしました。🤤 氷を入れたタンブラーに注いで、仕上げはソーダアップ。 ひと口目から、洋梨の甘い香りがふわりと広がります。 洋梨の季節に、ぜひどうぞ。 Fresh-Pressed Pear Sour 🍐 Made two ways from ripe pears. Created under the supervision of Mr. Yamaguchi of "Chanoyu / bar Soso" (@chanoyubar_soso). We steep ripe pear in rice shochu, then blend it with pear juice. The cold-pressed juice is warmed slowly over low heat, swirling the pot so it never boils, until it reduces to 80%. The pear's sweetness and aroma become rich and concentrated.
